Pietrangelo is our single-cultivar extra virgin olive oil, made from Rotondella olives — the variety typical of the Salerno hills of the Cilento. The name is our great-grandfather’s given name; his nickname, «Catena» — Italian for «chain», after the gold-chained pocket watch he proudly carried — became the name of the family farm.
Made from olives harvested at Bellosguardo, in the province of Salerno, this oil stands out for its assertive character: sweet on the palate, with light but persistent notes of bitterness and pepper on the finish, and a clean aftertaste of almond and grass. The intense aroma reveals a balanced harmony of green olive fruit, artichoke, grass and almond.
Pairings: excellent on bruschetta, grilled vegetables, pulse soups, baked fish and fresh cheeses.

Which size should I choose?
The 250 ml bottle suits someone who uses good oil raw, without hurrying: you finish it within a few weeks and it always stays fresh.
What does Pietrangelo taste like?
It is an assertive oil. Sweet on the palate at first, then light but persistent notes of bitterness and pepper arrive, and the finish stays clean with almond and grass. On the nose you can pick out green olive fruit, artichoke, cut grass and almond.
What do I use it on?
It is at its best raw: bruschetta, grilled vegetables, pulse soups, baked fish, fresh cheeses. It holds up in cooking too, but the character that sets it apart comes through when you pour it over the finished dish.
Why single-cultivar rather than a blend?
Because we use one olive variety only — Rotondella, from the hills of Salerno — with nothing blended in. A blend exists to keep the taste constant from one harvest to the next; a single cultivar lets the harvest show, and gives you a recognisable profile in return.
How should I store it?
Away from light and heat, at room temperature, away from strong smells. Not in the fridge and not next to the hob: light and heat are the two things that ruin extra virgin olive oil. Close the bottle tightly after use.
How long does it last once opened?
An extra virgin oil is at its best within a few months of opening, if stored well. It does not «expire» suddenly: it gradually loses its aromas and fresh notes. That is why, if you use it sparingly, a small bottle beats a tin.
